This Rainbow Dessert Pizza is a fun and very colorful summertime treat loaded with delicious cream and fruit. Both parents and kids alike will love it!

We had so much fun making this Rainbow Dessert Pizza. It’s perfect for Pride Month, a birthday or graduation celebration, or potluck, or just because on a hot summer day!
What you will need to make rainbow dessert pizza
- 1 1/2 cups of graham cracker crumbs
- 6 tablespoons butter, melted
- 8 oz. cream cheese, room temperature
- 8 oz. heavy whipping cream
- 2 teaspoons of Jell-o (five flavors; berry blue, strawberry, orange, lemon, and lime)
- Fruit toppings (blackberries, blueberries, kiwis, banana, mandarin oranges, and strawberries)
How to make “pizza crust” for Rainbow Dessert Pizza
- First, add one package of graham crackers to a food processor and pulse on high for about 30 seconds. Alternatively, you could also use a fork or your fingers to make crumbs. One package of graham crackers will provide about 1 1/2 cups of crumbs.
- Second, add 6-8 tablespoons of melted butter to the graham cracker crumbs. If you’re using a food processor, just pour on top of the crumbs and pulse for a few seconds until combined. Or, use a spoon or a fork to combine the butter and crumbs if you’re not using a food processor.
- Next, spray a thin layer of cooking spray on a 13 in. round pizza pan. Then dump the buttery graham cracker crumbs onto it.
- Finally, with your fingers, spread the crumbs all over the pizza pan until it is covered evenly.
How to make “pizza sauce” for Rainbow Dessert Pizza
- First, whip 8 ounces of liquid heavy whipping cream on high speed for 1-2 minutes or until firm. (Alternatively, you could use ready-made Cool Whip.) Set aside.
- Second, beat the softened cream cheese until it is very smooth. Add the whipped cream to the cream cheese and beat until well combined.
- Next, divide the cream evenly between six bowls and add jello mix to each to create a rainbow of colors.
- Add 2 teaspoons of various Jello mix to the cream. For purple, use 1 teaspoon of berry blue and 1 teaspoon of strawberry. For blue, use 2 teaspoons of berry blue. For green, use 2 teaspoons of lime. For yellow, use 2 teaspoons of lemon. For orange, use 2 teaspoons of orange. And for red, use 2 teaspoons of strawberry. Mix each flavor until well combined. The jello will provide sweetness, color, and flavor.
- Now, transfer each cream color to a piping bag or a small storage bag.
- Cut a small hole in the corner and begin piping each color onto the “pizza crust.” Start with purple in the center. Next, pipe a blue line evenly around the purple circle. Next, pipe green, then yellow, then orange, then red. Very gently smooth out the rows with a butter knife.
- [Note: The rainbow colored “sauce” step CAN be skipped. If you prefer to forego the Jello and keep the cream white, just add 3 tablespoons of sugar or maple syrup to the cream, and then spread evenly over the graham cracker crust.]
Toppings for Rainbow Dessert Pizza
- Purple – First, place a few blackberries in the middle of the “pizza” in the purple cream.
- Blue – Next, add a row of blueberries in the blue cream.
- Green – Thinly slice kiwis, cut them in half, and then lay the pieces on top of the green cream.
- Yellow – Thinly slice bananas and lay the pieces on top of the yellow cream.
- Orange – Now, use individual mandarin pieces for the orange cream.
- Red – And last, thinly slice strawberries and lay the pieces on top of the red cream.
After you add toppings, loosely cover with plastic wrap and chill for at least an hour and then enjoy!
